Purpose of the Role
To manage the daily operations of the butchery department in a family-run retail supermarket, ensuring excellent product quality, food safety, customer service, and profitability while maintaining a clean, well-presented counter.
Key Responsibilities

Oversee all day-to-day butchery operations

Prepare, cut, portion, and display meat products to a high standard

Supervise and support butchery staff (training, scheduling, performance)
-
Ensure attractive product displays to drive sales
-
Maintain strict hygiene, cleanliness, and food safety standards
-
Monitor stock levels and place orders with suppliers
-
Manage stock rotation, freshness, and waste control
-
Minimise shrinkage and protect department margins
-
Ensure correct pricing and labelling of products
-
Assist customers with product advice, special cuts, and orders
-
Ensure compliance with health, safety, and store procedures

Minimum Requirements

Proven experience as a Butchery Manager, Blockman, or Senior Butcher
-
Strong knowledge of meat cuts, deboning, trimming, and portioning
-
Experience working in a retail butchery environment
-
Knowledge of food safety and hygiene regulations
-
Experience supervising staff
-
Stock control and ordering experience
