Purpose of the Role
To manage the daily operations of the butchery department in a family-run retail supermarket, ensuring excellent product quality, food safety, customer service, and profitability while maintaining a clean, well-presented counter.


Key Responsibilities

  • Oversee all day-to-day butchery operations

  • Prepare, cut, portion, and display meat products to a high standard

  • Supervise and support butchery staff (training, scheduling, performance)

  • Ensure attractive product displays to drive sales

  • Maintain strict hygiene, cleanliness, and food safety standards

  • Monitor stock levels and place orders with suppliers

  • Manage stock rotation, freshness, and waste control

  • Minimise shrinkage and protect department margins

  • Ensure correct pricing and labelling of products

  • Assist customers with product advice, special cuts, and orders

  • Ensure compliance with health, safety, and store procedures


  • Minimum Requirements

    • Proven experience as a Butchery Manager, Blockman, or Senior Butcher

    • Strong knowledge of meat cuts, deboning, trimming, and portioning

    • Experience working in a retail butchery environment

    • Knowledge of food safety and hygiene regulations

    • Experience supervising staff

    • Stock control and ordering experience
